Spicy Black Pepper Shrimp

INGREDIENTS
- 2 servings of fresh udon noodles or 8 oz of dry udon noodles cooked according to package instructions
 - 12 medium shrimp – deveined and shelled
 - 2 tbsp butter
 - 1 tsp sugar
 - 1 tsp minced garlic, or 2 garlic cloves minced
 - 1 tsp fresh ginger, grated
 - ½ small red onion – thinly sliced
 - 1 cup sugar snap peas
 - ½ carrot, diced or sliced
 - ½ red bell pepper, cut into strips
 - 1 cup baby corn, cut into 1 inch pieces
 - salt to taste
 
For the Sauce
- ½ tbsp black peppercorns
 - 3 tbsp of light soy sauce
 - 1 tbsp rice wine vinegar
 - 1 tsp sugar
 - 1 tsp oyster sauce or hoisin sauce
 - 3 tbsp water
 - 1 tsp cornstarch
